The Health Inspector Spent 4 Hours in 'The Boss's Basement' and Left With a 47-Page Report and a Thousand-Yard Stare

There are health inspection reports, and then there is whatever the county filed after visiting The Boss's Basement, Breadstick Ricky's new delivery-only ghost kitchen operating out of — and we cannot stress this enough — an actual basement.

The concept was simple, according to Ricky: no dining room, no signage, no customers in person. Just breadsticks, a delivery app, and vibes. The concept was also, according to literally every regulatory body involved, not how restaurants work.

We got our hands on the full inspection report through a source we are legally required to describe as "a guy from the water department." What follows are annotated excerpts.

10:04 AM — Arrival

"Establishment located via a door behind a second, unrelated door. Greeted by an individual identifying himself only as 'The Boss' who asked if I had an appointment. I did not. I am the health department."

Our note: The inspector's use of italics here is doing a lot of emotional work. You can feel a man recalibrating his entire career.

10:19 AM — Food Storage

"Breadsticks stored in a structure described by staff as 'the Breadstick Parliament.' Approximately 200 units arranged in what staff insist is a 'governing formation.' When asked which breadstick is in charge, kitchen staff pointed at me."

Our note: This is the first documented instance of the breadsticks achieving anything resembling government. Historians, take note.

11:37 AM — Temperature Log

"No thermometer present. When asked how staff confirm food temperatures, a kitchen worker said, quote, 'Ricky knows.' Asked where Ricky was, staff pointed at a wall. There was no Ricky in the wall."

Our note: There was, in fact, no Ricky in the wall. We checked. The wall is now load-bearing in ways the architect did not intend.

12:15 PM — The Note Everyone Is Talking About

"The breadsticks appear to be watching me."

Our note: That's it. That's the whole entry. No elaboration, no correction, no follow-up. Just a professional man at the end of his rope, writing down what he saw. The inspector reportedly took an unpaid lunch break afterward and sat in his car for 55 minutes.

The DoorDash Situation

Meanwhile, the customers — who have never seen the basement and honestly should not — have been leaving reviews that defy the rating system itself.

Review #1: One star.

"My driver never arrived. Instead a breadstick was on my porch. Just one. Standing upright. Five stars though, honestly, respect."

Review #2: One star.

"The app said my food was delivered 40 minutes before I ordered it. I don't like that. But the marinara was warm and somehow tasted like my childhood. One star, five stars, I don't know anymore."

Review #3: One star.

"Someone named The Boss called me to ask if I was 'enjoying the dip.' I hadn't received food yet. I said no. He said 'yet' and hung up. When the food came it was the best thing I've ever eaten and I'm scared of it now."

DoorDash's algorithm has apparently given up and started displaying these reviews as "5 stars (1 star)" which is not a real feature anyone at the company can explain.

The Verdict

The county issued 31 citations, including one for "operating a legislature out of a food prep area" — a citation category the inspector had to invent on the spot. The Basement remains open for delivery while appealing, because as The Boss told us through the second door: "Rules are for restaurants. We are a movement."

The inspector, we're told, has requested a transfer to the septic division. We wish him nothing but peace.
